He’s obsessed with balance, bold flavors, and doing things properly — and he’s poured that energy into every drink on the menu.
Hey Palu
Hey Palu is a cocktail bar in Edinburgh’s Old Town, built on a love for Italy’s aperitivo culture, and a deep respect for doing things properly.
Opened in 2019 by Amalfi Coast native Alex Palumbo and his wife Rachel, the bar brings a modern take on timeless Italian drinking traditions. That means bold, balanced cocktails: from freezer-cold Gin Martinis and silky Negronis to signatures like the Nutella Old Fashioned and The Godfather. It’s all about amari, vermouths, and bitters, served with a sense of style and a whole lot of heart.
Since opening, Hey Palu has picked up plenty of love. It was awarded a Pinnacle Guide Pin in 2024, ranked No. 16 on the UK’s Top 50 Cocktail Bars (No. 5 the year before), and named Best Cocktail Bar in Scotland by the Scottish Bar & Pub Awards. It’s also featured on the World’s 50 Best Discovery list, and has taken home awards from Class Bar Magazine, Best Cocktail Bar in Scotland 2022 by SLTN, and more.
But at the end of the day, what matters most isn’t the trophies, it’s the people at the bar, and the kind of night you have.That’s always been the point.
